How to bake with emmer flour
Emmer protein forms a more fragile network than common wheat protein, so emmer dough neither needs nor tolerates a long knead. Mix until it comes together, then let it rest: knead it too long and it turns slack, and the loaf loses its shape in the oven.
The most reliable way in is partial substitution. Replace 20-30% of the flour in a recipe with emmer flour and you get emmer's mild, nutty flavour while keeping the structure you are used to. For pancakes, biscuits and porridges you can go to 100% emmer flour — there the dough's gluten network does not matter.
Emmer flour is rarely an everyday flour, so choose the bag size by how often you plan to bake. At a 20-30% substitution, three kilograms is enough for roughly ten loaves. Keep an opened bag in an airtight container somewhere cool and dark, as you would any wholemeal flour.
What is emmer? The ancient grain on our table
How it differs from whole-grain wheat flour
Both keep the natural components of the kernel, but they come from different plants. Whole-grain flour is milled from common wheat and tastes like familiar, neutral bread. Emmer is an ancient hulled wheat: its flour is a darker gold, carries a distinctive nutty flavour and makes a more fragile dough, which is why it is more often used in a blend than on its own.
Frequently asked questions
- What bag sizes are available and what does it cost?
- Sold in 3, 5, or 10 kg bags. The price is 800 AMD per kilogram, and a bag is priced by its weight.
- What can I bake with emmer flour?
- Bread and baked goods, pancakes, biscuits, desserts and porridges. For bread, emmer flour is usually blended with wheat flour; for pancakes and biscuits it works well on its own.
- How does emmer flour behave in dough?
- Emmer dough is softer and more fragile, and it does not like a long knead. Mix until smooth and let it rest. For a first attempt we suggest replacing 20-30% of the flour with emmer rather than all of it.
- Can emmer flour replace ordinary flour in a recipe?
- Partly, yes. Replacing 20-30% barely changes the result but adds flavour and aroma. Bread made with 100% emmer flour comes out lower and denser, which suits some recipes and not others.
- What bag size should I start with?
- 3 kg is enough to begin with: at a 20-30% substitution that covers about ten loaves, and it gives you time to find out how much you like emmer's flavour. If you already know you bake regularly, a 5 or 10 kg bag works out better per kilogram.
